Chicken is my BFF
I have always loved chicken. Any kind of chicken, I don't care. Fried, grilled, baked, strips, nuggets, tenders, breasts... I love it all. I was obviously thrilled to find a chicken recipe in our first Hello Fresh box! Tonight I followed the Panko Parm Poulet with Potatoes recipe. (Poulet is a fancy/ word for CHICKEN) One item that was part of the meal, but not included in the title was spinach. Shockingly, spinach is not something I've always loved.
Today was not a great day and my husband even offered to take me out to dinner, but I insisted that I was going to cook our second Hello Fresh meal.
I checked out the recipe and the first thing I needed to do was start the potatoes. Potatoes take a long time to cook. I didn't have parchment paper, so I used tin foil.
I covered them in olive oil, sprinkled some salt and pepper on them and in the oven they went.
I almost forgot to flip them halfway through the 25 mins. baking time. That would have not ended well... some of the potatoes were stuck to the tin foil after baking for only 12 mins.
Once the potatoes were baking, I made the panko parm mixture. Super easy. The little packets that the ingredients come in are precious too.
Then, I had to take the chicken breasts and "pound" it to make it thinner. I didn't have a mallet or the two pieces of plastic wrap that I was supposed to use either. I improvised and put the chicken in a large ziploc bag and used the bottom of a pot and pounded the chicken. It worked out just fine.
The next step was to spread sour cream over the chicken, after you sprinkled some salt and pepper on there. I didn't think I would like sour cream, but once the chicken cooked, I couldn't even tell it was on there. Make sure you pay attention to the amount of sour cream you need though, and don't just use both packets provided. You have to use some of the sour cream later on in the recipe.
Once the sour cream is spread, it was time to press the panko mixture onto the chicken. The amount of panko mixture was perfect! I barely had anything left over.
It was finally time to put the chicken in the oven. It didn't take long to cook at all. I wish I would have adjusted the rack in the oven though. The parm/panko mixture got a little too dark for my preference because I had the potatoes on the bottom rack and the chicken up top.
While the chicken and potatoes baked, I made a dressing...my first ever homemade dressing! Olive oil, sour cream, lemon juice, salt and pepper. Simple and delicious. This was the first salad dressing that I actually liked. I don't love vinegar based dressings and I have never been a Ranch or Honey Mustard fan.
Once the potatoes were done, I mixed the spinach and potatoes in the dressing mix.
My hubby walked in the door just as I was finishing dinner. I plated both our meals and I was really pumped to try it out.
I loved it!! I ate the entire chicken breast and while I was nervous about the spinach and potato mixture, I squirted some lemon juice on the spinach and made sure to get both potato and spinach in the same bite. It was a lovely texture and taste.
I've only made 2 Hello Fresh recipes, but I can already tell this will remain one of my all-time favorites.
